The local deli/store makes a wonderful potato salad they call "Nanna's Potato Salad". At $5/lb. I think I figured it out. I think they suatee' the potato cubes lightly in bacon fat and add a small bit of "ground to dust" bacon itself. I've made some this year with that idea in mind and I get the same flavor. For about $1/lb.
So here is tomorrow's potato salad. Forgot to put the vinegar sprinkler in the pic, though...

I never use vinegar in my potato salad. I have gotten lazy and now I bake the potatoes in the microwave, cool and chop up.
I put sweet pickles, black olives, a glop of Dijon mustard, and an apple in addition to your ingredients, sans the celery and bacon. Unexpected guests showed up and I had to extend the salad, without time to cook another potato. No celery, which I normally would've used. Guest picked up an apple. We added it, and the rest was history. It gets rave reviews and I'm asked to bring it.
